Awesome Spinach & Vegan Cheese Calzone

We made the best Spinach & Vegan Cheese Calzones for dinner the other nigh!

Here's the instructions if you're looking to duplicate my masterpiece:

Crust/Topping:
1 Pizza Dough Ball (I got Wheat from Trader Joe's)
1 TSP Vegan Parmesan Cheese (Recipe Below)
1 TBSP Olive Oil

Filling:
1 Package Extra Firm Tofu (Drained w/ excess water removed)
1 Package (10 oz) Frozen Chopped Spinach
1 Package (8 oz) Daiya Mozzarella Cheese
1/4 Cup Egg Substitute
1/2 Cup Milk (Almond or Soy)
1 TBSP Vegan Parmesan Cheese
1 TSP Salt

Dipping Sauce:
1 Jar Marinara

Instructions:
Preheat the oven to 450 degrees with the pizza stone inside. Crumble the tofu and combine with all of the other ingredients for the filling. Divide the pizza dough ball into two, set one aside. Work the dough into a circle, about 12". Place the filling on one side of the, leaving about 1" around the edges. Fold the dough over to enclose the filling. Roll up the edges with your fingers to close tightly and prevent leaking. Cut a few slashes in the top to allow steam to escape during baking and brush with the olive oil & Parmesan mixture. Cook at 450 degrees for about 15 minutes or until golden brown and delicious!

Vegan Parmesan:
1 Cup nutritional Yeast
1/2 Cup Whole Almond
1/2 TSP Salt
Instructions: Combine in a food processor to a fine powder.

Enjoying the heck out of the beach! Whit, Karan, Lori, Owen and I got down here Saturday afternoon and Elizabeth got down here Saturday evening and we went to Flamingo Grill for dinner, it was really good! Then Mom and my cousin John got here Sunday afternoon. We had Katie's famous baked spaghetti for dinner, it was amazing! Monday we went to the beach and relaxed. Had hamburgers and hot dogs for dinner, and mac & cheese. I was super tired so went to be by 9. Today I think we are headed back to the beach and Dan & Kristi and Michael & Jess will be here this evening. Thursday Sarah gets here from Boston and we go Deep Sea Fishing, I can't wait!!!

I started to make dinner tonight and Owen wanted to help. I didn't

Troubles with plane...

So, we were scheduled to take off at 3:00 PM... First of all some
executivies were late, about 20 minutes. Then we get on the plane and
the pilots can't close the door. They struggled with it for a few
minutes, them we lost our clerance to take off, bad weather, so we
were grounded. Then they just got clerance, so here we go. Hope the
door stays shut!

I can't wait to get out of my contract with AT&T. They have the worst
coverage, all of those Verizon commercials are 100% fact. The picture
below shows the every day example of the phone searching for signal i
thought Apple was better than a PC? I have to reboot this POS phone
daily. I can't wait to get the Droid... Google is the way to go!!!
